Is there any way to cut the subject to place it on another totally different background? I have not been able to find a solution.
In a word, no. PL is a raw editor rather than a Ps clone. You need Ps or an equivalent to achieve that.
I just thought as the new AI masking is in it own class, there would as well be a short way to remove chosen areas.
Only smaller areas can be replaced to some extent with the ReTouch-tool. That is all but I find it often very useful.
The AI masking as implemented is not intended as generative AI, only as object or subject selection for editing.

But what can be used to replace the background? No “photos arbitrarily designated as open source by the manufacturer” are used as AI learning material by DXO.
It maybe that you have chosen the wrong software. PL like Lr is not intended for that purpose and probably never will be. Alternatives include Ps, Affinity and ON1.
