Is there a way to change the default for cropping from Original to Unconstrained?

Yes. You can define an own new Preset - based on the "1. DxO Standard". After saving the Crop to Unconstrained Preset, go to the Preferences/General page and change the actual RAW / JPG image default Preset to your new one. All other parameters must be unchanged vs. "1. DxO Standard".

You can also hit the control key and drag (on windows OS).
